Job Summary
We are looking for a skilled and dedicated Sushi Chef to join our team. In this role, you will be responsible for preparing a wide variety of sushi, sashimi, and maki rolls to the highest standards of taste and presentation. You will manage your station, select fresh ingredients, and engage with guests if working at a front-facing sushi bar
Core Responsibilities
- Sushi Preparation: Prepare, cut, and present high-quality sushi, sashimi, nigiri, and traditional or signature maki rolls.
- Fish & Ingredient Handling: Clean, fillet, and portion fresh seafood with precision, ensuring proper storage and minimizing waste.
- Station Prep & Setup: Prepare sushi rice, sauces, vegetables, and other garnishes before service, ensuring the station is fully stocked.
- Quality Assurance: Inspect seafood and other inventory daily to ensure maximum freshness, flavor, and visual appeal.
- Sanitation & Food Safety: Maintain strict cleanliness and sanitation standards at your station, adhering to food safety regulations regarding raw fish handling and storage.
- Guest Interaction: Deliver exceptional customer service and answer questions about the menu if working directly in front of guests at the sushi bar.
- Inventory Control: Monitor stock levels and assist the head chef or manager with ordering fresh fish and specialty ingredients.
Requirements & Qualifications
- Experience: Minimum of 1 year of professional experience as a Sushi Chef or Sushi Apprentice in a fast-paced environment.
- Technical Skills: Strong knife skills, expertise in traditional fish-cutting techniques, and mastery of sushi roll assembly and presentation.
- Product Knowledge: Deep understanding of different fish species, ingredients, and traditional Japanese flavor profiles.
- Physical Stamina: Ability to stand for long periods and work efficiently under pressure during peak dining hours.
- Traits: Sharp attention to detail, strong organizational skills, and a commitment to teamwork.
- Availability: Flexible schedule, including evenings, weekends, and holidays.
